Blueberry Protein Waffles – Great for Post Workout Recovery

Are you looking for a great post-workout treat? If you’re like me, you spend a good amount of your workout or long run thinking about what you’re going to eat after. This is the perfect healthy post-workout, otherwise known as “breakfast #2”.

These would also be great with chocolate flavored protein powder & chocolate chips mixed in! The flavor combinations are endless!

Blueberry Protein Waffles

Ingredients

  • 1/2 c oats
  • 2 scoops protein powder
  • 2 large eggs
  • 1/3 c vanilla greek yogurt or cottage cheese
  • 2 tbsp milk of choice
  • 1 tbsp nut or seed butter
  • 1/2 tsp baking powder
  • 1 pinch salt
  • 1/4 tsp cinnamon
  • 1/2 c blueberries

Instructions

  • Preheat waffle iron. Add all waffle ingredients to a blender, except for blueberries. Blend until a smooth batter forms.
  • Stir in blueberries. 
  • Spray waffle iron with nonstick spray. Pour batter into waffle iron. The batter should make 4 waffles total. Cook until golden brown, or for about 4-5 minutes. 
  • Add your favorite toppings and enjoy. These are great for freezing too!

Notes

*If you use cottage cheese, add an additional tbsp milk.
